Ribs & Strips is a barbecue seasoning with a savory heart. Paprika and pepper lead the way, with onion, garlic, sugar and salt bringing balance. A savory umami note makes the blend useful wherever you want deep, satisfying flavor rather than just heat. Despite the name, it is not limited to ribs.
Rub it over pork ribs before slow roasting or smoking, or use it on chops, chicken and beef before grilling. For a quick oven dinner, season chicken pieces and potato wedges, then roast them on separate trays as needed for proper cooking. The blend is also a surprising match for buttery popcorn, homemade potato chips, sautéed green beans and roasted Brussels sprouts.
When using it as a dry rub, coat the food evenly and allow a little time for the seasoning to settle before cooking. Sugar in the blend can brown quickly over high heat, so keep an eye on the crust. For a dipping sauce, stir a small amount into mayonnaise or your favorite barbecue sauce, then taste.
Duffy’s Take
For ribs, I want a rub that builds a good crust without stealing the show. Paprika, garlic, and pepper do exactly that. Chicken strips are a hit as well. Low and slow is the way to go.
