- 2 cans cannellini beans, drained and rinsed (15 oz each)
- 1 parmesan rind optional
- 2 cups fresh spinach or kale
- 1/2 cup freshly grated parmesan cheese, plus more for serving
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- Optional crushed red pepper flakes for serving
Directions
Heat the olive oil in a large Dutch oven or heavy soup pot over medium heat.
Add the onion, carrots, and celery. Cook for 8 to 10 minutes, stirring occasionally, until softened and lightly golden.
Add the garlic and cook for 30 seconds while stirring constantly until fragrant.
Add the tomato paste and cook for 1 minute, stirring continuously to lightly caramelize the paste.
