Ingredients
1 lb large shrimp (peeled, deveined)
1 tbsp Aloha Curry
2 tbsp soy sauce
3 tbsp pineapple juice (canned or bottled, not fresh)
1 tsp honey
2 cloves garlic, minced
1½ tsp fresh ginger, grated
1 tbsp coconut oil
1 cup pineapple chunks (well drained)
1 tbsp lime juice
1 tsp cornstarch + 1 tbsp water
Directions
In a bowl, whisk together Aloha Curry, soy sauce, pineapple juice, honey, garlic, ginger, and lime juice.
Pat shrimp very dry for proper searing.
Heat oil in a large skillet over medium high heat.
Add shrimp in a single layer and cook for 1 to 1½ minutes per side. Remove once just pink.
In the same pan, add pineapple chunks and cook for 2 to 3 minutes until lightly caramelized. Pan must be hot for proper caramelization.
Pour in the sauce and bring to a simmer.
Stir in the cornstarch slurry and cook for 30 to 60 seconds until the sauce becomes glossy.
Return shrimp to the pan and toss for 30 to 60 seconds until fully coated and just cooked through.
Suggested serving methods: over rice or noodles and garnished with chopped fresh cilantro, lime wedges, sliced green onions, toasted coconut flakes, toasted sesame seeds, or a light sprinkle of Aloha Curry.
