Ingredients
2 1/2 pounds bone in skin on chicken thighs or mixed chicken pieces
2 tbsp olive oil
1 tbsp unsalted butter, melted
2 1/2 to 3 tsp Tutto Italiano seasoning
1 tsp kosher salt
1/2 tsp black pepper
5 garlic cloves, smashed
1 small yellow onion, thickly sliced
1 lemon, half sliced and half reserved for juice
2 tbsp fresh parsley, chopped
1/4 cup chicken broth
Optional crushed red pepper flakes for serving
Directions
Preheat the oven to 425°F.
Pat the chicken completely dry with paper towels. Dry skin is essential for proper browning and crispiness.
In a small bowl, combine the olive oil, melted butter, Tutto Italiano seasoning, kosher salt, and black pepper.
Arrange the chicken in a large baking dish or oven safe skillet. Tuck the smashed garlic cloves, onion slices, and lemon slices around the chicken.
Brush or rub the herb mixture evenly over all sides of the chicken, including underneath portions of the skin where possible for deeper flavor.
Roast uncovered for 30 to 40 minutes, depending on the size of the chicken pieces, until the skin is golden brown and crisp and the internal temperature reaches 175°F in the thickest portion of the thighs.
After about 20 minutes, spoon some of the pan juices over the chicken to help develop flavor and color.
If the pan becomes dry during roasting, add the chicken broth carefully to the bottom of the pan.
For extra crispy skin, broil for 1 to 2 minutes at the end while watching carefully.
Remove from the oven and allow the chicken to rest for 5 to 10 minutes before serving.
Squeeze the reserved lemon over the chicken and garnish with fresh parsley and optional crushed red pepper flakes before serving.
Serve with roasted potatoes, parmesan polenta, grilled vegetables, focaccia bread, Caesar salad, or buttered pasta.
