Ingredients
2 lbs chicken thighs (boneless, skinless, cut into bite size pieces)
1½ tbsp Aloha Curry
1 tbsp coconut oil
2 cloves garlic, minced
1½ tsp fresh ginger, grated
1 can (13.5 oz) coconut milk (full fat)
½ cup pineapple chunks (well drained)
3 tbsp pineapple juice (canned or bottled, not fresh)
1½–2 tsp soy sauce
1 tbsp lime juice
½ tsp cornstarch (optional) + 1 tbsp water
Directions
Heat oil in a large pan over medium high heat.
Pat chicken dry. Add chicken in a single layer and cook for 4 to 5 minutes until lightly browned. Remove and set aside.
In the same pan, reduce heat to medium low, add garlic and ginger and cook for 30 to 60 seconds until fragrant.
Add Aloha Curry and stir for 20 to 30 seconds to bloom the spices.
Turn the heat back to medium high, and pour in coconut milk and pineapple juice. Stir and bring to a gentle simmer.
Return chicken to the pan and simmer for 8 to 10 minutes until fully cooked.
Stir in pineapple chunks and cook for 2 minutes.
Add soy sauce and lime juice. Taste and adjust as needed.
If a thicker sauce is desired, stir in the cornstarch slurry and cook for 30 to 60 seconds.
Serve immediately over rice.
