1 pork loin (about 3 lbs)
- 4 tablespoons olive oil, divided

3 tablespoon King of Meat seasoning
- 2 apples, peeled, cored, and thinly sliced
- 4 cups kale, torn into bite-sized pieces
- 1 large onion, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- ¼ cup dijon mustard
- ¼ cup bread crumbs
- Butcher’s twine
Directions
Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the onions and cook until they start to soften, about 10 minutes. Add the apples, butter, and brown sugar to the skillet. Cook until the apples and onions are caramelized, about 10 minutes, stirring occasionally. Stir in the thyme, rosemary, and kale. Cover and simmer for another 5 minutes, stirring occasionally. Remove from heat and let the mixture cool.
- Prepare the Pork Loin: Preheat your oven to 375°F. Butterfly the pork loin by slicing it lengthwise, being careful not to cut all the way through, so you can open it like a book. Place the butterflied pork between two pieces of plastic wrap and pound it to an even thickness, about ½ inch.
Assemble the Roulade: Spread the dijon mustard evenly over the surface of the pork. Sprinkle 1 tablespoons of King of Meat seasoning over the mustard. Spread the chilled caramelized apple mixture evenly over the mustard layer. Sprinkle bread crumbs over the filling. Starting from one long side, tightly roll the pork loin into a roulade. Tie it with butcher’s twine at 1-2 inch intervals to secure the roll.
Season and Sear the Roulade: Season the outside of the roulade with 2 tablespoons of King of Meat seasoning. In an oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the roulade on all sides until browned.
- Roast the Roulade: Once seared, transfer the skillet to the preheated oven. Roast for about 35 minutes, or until the internal temperature reaches 140°F.
Rest and Serve: Remove the roulade from the oven and let it rest for 10 minutes before slicing. Slice into rounds and serve.
