Ingredients
1 pork loin (about 3 lbs)
4 tbsp olive oil, divided
2½ tbsp King of Meat seasoning, divided
2 apples, peeled, cored, and thinly sliced
4 cups kale, torn into bite sized pieces
1 large onion, thinly sliced
2 tbsp unsalted butter
2 tbsp brown sugar
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
¼ cup Dijon mustard
¼ cup breadcrumbs
Butcher's twine
Directions
Heat 2 tbsp olive oil in a large skillet over medium heat. Add onions and cook for 8–10 minutes until softened.
Add apples, butter, and brown sugar. Cook another 8–10 minutes until lightly caramelized while stirring occasionally.
Stir in thyme, rosemary, and kale. Cook for another 3–5 minutes until kale softens. Remove from heat and allow the filling to cool completely.
Preheat oven to 375°F.
Butterfly the pork loin by slicing lengthwise without cutting completely through. Open like a book and place between plastic wrap.
Pound to approximately ½ inch thickness for even rolling.
Spread Dijon mustard evenly over the pork and sprinkle with 1 tbsp King of Meat seasoning.
Spread cooled filling evenly over pork and sprinkle breadcrumbs across filling.
Starting from one long side, roll tightly and secure with butcher's twine every 1–2 inches.
Rub exterior with remaining 1½ tbsp King of Meat seasoning.
Heat remaining olive oil in an oven safe skillet and sear roulade on all sides until browned.
Transfer skillet to oven and roast 40–50 minutes until internal temperature reaches 145°F.
Rest for 10–15 minutes before removing twine and slicing.
