2 tbsp brown sugar

1 tbsp fresh thyme, chopped

¼ cup breadcrumbs

Directions
Heat 2 tbsp olive oil in a large skillet over medium heat. Add onions and cook for 8–10 minutes until softened.
Add apples, butter, and brown sugar. Cook another 8–10 minutes until lightly caramelized while stirring occasionally.
Stir in thyme, rosemary, and kale. Cook for another 3–5 minutes until kale softens. Remove from heat and allow the filling to cool completely.
Preheat oven to 375°F.
Butterfly the pork loin by slicing lengthwise without cutting completely through. Open like a book and place between plastic wrap.
Pound to approximately ½ inch thickness for even rolling.
Spread Dijon mustard evenly over the pork and sprinkle with 1 tbsp King of Meat seasoning.
