Ingredients
- 4 boneless skinless chicken breasts
- 2 tbsp olive oil, divided
2 1/2 to 3 tsp Tomatino Pepperino seasoning, divided
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 tsp balsamic vinegar
- 1 cup shredded whole milk mozzarella cheese
- 1/4 cup freshly grated parmesan cheese
- 1 tbsp tomato paste
- 1 tbsp fresh basil, chopped, plus more for garnish
- 1 tbsp balsamic glaze
- 1/4 tsp crushed red pepper flakes optional
Directions
- Preheat the oven to 425°F.
- Lightly grease a 9x13 inch baking dish with olive oil.
- Pat the chicken breasts dry thoroughly with paper towels. If needed, pound the thicker portions slightly so the chicken cooks evenly.
Season both sides of the chicken with 1 1/2 tsp Tomatino Pepperino seasoning, kosher salt, and black pepper.
- Arrange the chicken in the prepared baking dish.
In a mixing bowl, combine the cherry tomatoes, garlic, tomato paste, balsamic vinegar, 1 tbsp olive oil, remaining Tomatino Pepperino seasoning, fresh basil, and optional crushed red pepper flakes. Toss thoroughly to coat.
- Spoon the tomato mixture evenly around and partially over the chicken.
- Bake uncovered for 18 to 22 minutes depending on thickness until the chicken reaches approximately 155°F internal temperature.
- Remove the dish from the oven and sprinkle mozzarella and parmesan cheese evenly over the chicken and tomatoes.
- Return to the oven and bake for an additional 5 to 7 minutes until the cheese is melted and bubbly and the chicken reaches a final internal temperature of 165°F.
- Allow the chicken to rest for 5 minutes before serving so the juices redistribute.
- Drizzle lightly with balsamic glaze and garnish with additional fresh basil before serving.
