Ingredients
9 Large Eggs
½ Cup Heavy Cream
2 Tbsp plus 1 Tsp of Sea Salt & Herbs
2 Tbsp Olive Oil
1 Small Yellow Onion, Finely Chopped
2 Cloves Garlic, Minced
1 Cup Cherry Tomatoes, Halved
2 Cups Fresh Spinach, Roughly Chopped
6 oz Goat Cheese, Crumbled
Fresh Basil or Parsley, for Garnish (Optional)
Directions
- Preheat your oven to 375°F.
- In a large bowl, whisk together the eggs, milk, and 2 tablespoons of the Sea Salt and Herb seasoning until well combined. Set aside.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the chopped spinach and cook until wilted, adding another teaspoon of Sea Salt and Herb seasoning.
- Pour the egg mixture over the cooked vegetables in the skillet. Gently stir to distribute the vegetables evenly in the egg mixture.
- Sprinkle the crumbled goat cheese evenly over the top of the egg mixture.
- Let the frittata cook on the stovetop over medium heat for about 5-6 minutes, or until the edges start to set. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and slightly golden on top.
- Remove the frittata from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley, if desired.
