Ingredients

9 Large Eggs
½ Cup Heavy Cream
2 Tbsp plus 1 Tsp of Sea Salt & Herbs
2 Tbsp Olive Oil
1 Small Yellow Onion, Finely Chopped
2 Cloves Garlic, Minced
1 Cup Cherry Tomatoes, Halved
2 Cups Fresh Spinach, Roughly Chopped
6 oz Goat Cheese, Crumbled
Fresh Basil or Parsley, for Garnish (Optional)

Directions

  1. Preheat your oven to 375°F.
  2. In a large bowl, whisk together the eggs, milk, and 2 tablespoons of the Sea Salt and Herb seasoning until well combined. Set aside.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for another 1-2 minutes until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the chopped spinach and cook until wilted, adding another teaspoon of Sea Salt and Herb seasoning.
  5. Pour the egg mixture over the cooked vegetables in the skillet. Gently stir to distribute the vegetables evenly in the egg mixture.
  6. Sprinkle the crumbled goat cheese evenly over the top of the egg mixture.
  7. Let the frittata cook on the stovetop over medium heat for about 5-6 minutes, or until the edges start to set. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and slightly golden on top.
  8. Remove the frittata from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley, if desired.
