Ingredients
2 Ripe Peaches, Large Diced
2 Ripe Heirloom Tomatoes, Large Diced
2 (4 oz) Portions of Burrata
¼ Cup High Quality Olive Oil
¼ Cup Crushed Pistachios
3 Tbsp Fresh Basil, Torn
3 Tbsp Fresh Mint, Torn
2 Tsp Steak Argentino
Squeeze of Fresh Lemon Juice
Salt and Pepper, to taste
Directions
- In a large mixing bowl, combine the diced peaches and heirloom tomatoes. Drizzle with the olive oil and add the Steak Argentino seasoning. Toss gently to coat the fruit and tomatoes evenly.
- Divide the peach and tomato mixture between two plates or a large serving platter. Place torn portions of burrata on each plate.
- Sprinkle the crushed pistachios over the salad. Scatter the torn basil and mint leaves on top. Finish with a squeeze of fresh lemon juice and salt and pepper to taste.
