Ingredients
Peach Salsa
1 Large Peach, Small Diced
2 Roma Tomatoes, Small Diced
1 Tbsp Red Onion, Small Diced
1 Garlic Clove, Minced
¼ Cup Cilantro, Chopped
2 Tbsp Olive Oil
1 Tbsp Smoky Cowboy
Zest and Juice from 1 Lime
Salt and Pepper to Taste

2 Tbsp Smoky Cowboy
2 Tbsp Olive Oil
Directions
Peach Salsa
In a medium bowl, add the diced peach, diced Roma tomatoes, diced red onion, and minced garlic. Mix well.
In a small bowl, add the chopped cilantro, olive oil, Smoky Cowboy seasoning, lime zest, and lime juice to the bowl. Stir well.
Pour the small bowl into the medium bowl and stir until well mixed. Season with salt and pepper to taste.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
BBQ Pork Chops
Preheat the grill to medium-high heat.
In a small bowl, combine the Smoky Cowboy seasoning and olive oil to create a marinade.
Rub the marinade evenly over the pork chops, ensuring they are well coated. Let the pork chops marinate for at least 30 minutes at room temperature or refrigerate for up to 24 hours for a more intense flavor.
Place the marinated pork chops on the preheated grill. Grill until they reach an internal temperature of 140°F. Remove and let them rest for a few minutes before serving. Serve the BBQ pork chops with the Peach Salsa as a topping.
