Ingredients
1 French baguette, sliced into ½ inch pieces, about 18–20 slices
2 tbsp olive oil
15 oz whole milk ricotta cheese
3-4 oz cream cheese, softened
2 tbsp grated Parmesan cheese
1 tbsp honey
1 tbsp fresh lemon juice
1–1½ tsp Veggie Meadow seasoning
¼ tsp kosher salt, or to taste
¼ tsp black pepper
½ tsp Veggie Meadow seasoning for finishing
2 tbsp chopped fresh parsley
Optional: halved cherry tomatoes
Optional: hot honey drizzle

Optional: balsamic glaze
Directions
Preheat oven to 400°F. Line a large baking sheet with parchment paper.
Arrange baguette slices in a single layer on the baking sheet and lightly brush the tops with olive oil.
Toast for 5-7 minutes, flipping once halfway through, until the crostini are lightly golden and crisp around the edges.
Remove crostini from the oven and allow them to cool for 5 minutes before topping.
Add ricotta cheese, softened cream cheese, Parmesan cheese, honey, lemon juice, 1–1½ tsp Veggie Meadow seasoning, salt, and black pepper to a food processor.
Blend for 45–60 seconds until smooth, creamy, and lightly whipped. Scrape down the sides as needed.
Taste the whipped ricotta and adjust with a small additional pinch of salt or lemon juice if needed.
Spread or pipe the whipped ricotta mixture onto the cooled crostini.
Finish with parsley and the remaining ½ tsp Veggie Meadow seasoning.
Add optional toppings such as cherry tomatoes, hot honey, microgreens, or balsamic glaze if desired.
