4 Eggs

3 tablespoons of milk

2 teaspoons of Veggie Meadow

2 tablespoons of butter

½ bell pepper chopped

1 carrot peeled and chopped
Directions
Wash and dry all fresh produce
Peel and dice carrot into 1/4" pieces
Dice pepper into 1/4" to 1/2" pieces
Whisk eggs and milk together, season with Veggie Meadow
Preheat shallow pan or skillet over medium-high heat
Once pan is heated add butter. Sautee carrots in melted butter until soft (5 minutes)
Add peppers to pan and continue to sauté until peppers are soft (1-2 minutes)
When peppers have softened reduce heat to medium-low, add egg mixture to pan and stir lightly. Cook eggs until heated through and scrambled. (5-7 minutes)
