Tomato Garlic Confit

1 cup grape tomatoes

½ cup garlic cloves, peeled

¾ cup olive oil

1 sprig thyme

2 tsp Sea Salt & Herbs seasoning
Goat Cheese Dip

6 oz goat cheese crumbles

¼ cup parsley, chopped

¼ cup dill, chopped

3 tbsp reserved confit oil

2 tsp Sea Salt & Herbs seasoning
Directions
Preheat oven to 350°F.
Add grape tomatoes, garlic cloves, olive oil, thyme, and Sea Salt & Herbs seasoning to a small oven safe baking dish and stir gently.
Bake for 35–45 minutes until tomatoes are blistered and beginning to collapse and garlic is soft enough to easily pierce with a fork.
Strain the oil and reserve 3 tablespoons for the goat cheese dip. Set confit mixture aside to cool slightly.
Combine goat cheese crumbles, parsley, dill, reserved confit oil, and Sea Salt & Herbs seasoning in a food processor.
Blend until smooth and creamy, scraping down the sides as needed. If the mixture appears too thick, add 1–2 tsp additional reserved confit oil.
Transfer goat cheese dip to a serving dish. Top with tomato garlic confit and drizzle with additional reserved confit oil if desired.
