Ingredients
8 oz rice noodles
1 lb chicken or shrimp
2 tbsp oil
2 cloves garlic, minced
2 eggs
3 tbsp soy sauce
2 tbsp brown sugar
2 tbsp tamarind paste
1 to 1.5 tsp Thai Delight
1/2 cup green onions, chopped
1/2 cup bean sprouts
1/4 cup crushed peanuts
Directions
Soak or cook rice noodles according to package directions. Drain and set aside.
Heat 1 tablespoon oil in a large pan over medium-high heat. Add protein and cook until done. Remove and set aside.
Add remaining oil. Cook garlic for about 30 seconds.
Push garlic to one side and scramble the eggs.
Add soy sauce, brown sugar, and tamarind paste. Stir to combine.
Add Thai Delight (start with 1 teaspoon). Mix well.
Return noodles and protein to the pan. Toss until evenly coated.
Turn off heat and fold in green onions, bean sprouts, and peanuts.
Suggested serving methods: with lime wedges, fresh cilantro, extra crushed peanuts, Thai cucumber salad, spring rolls, grilled shrimp, chicken satay, or spicy chili sauce.
