8 oz rice noodles

1 lb chicken or shrimp

2 tbsp oil

2 cloves garlic, minced

3 tbsp soy sauce

1/2 cup green onions, chopped

Directions
Soak or cook rice noodles according to package directions. Drain and set aside.
Heat 1 tablespoon oil in a large pan over medium-high heat. Add protein and cook until done. Remove and set aside.
Add remaining oil. Cook garlic for about 30 seconds.
Push garlic to one side and scramble the eggs.
Add soy sauce, brown sugar, and tamarind paste. Stir to combine.
