Ingredients
1 lb carrots, peeled and cut into batonnet (approximately 1/4 inch thick fry shaped sticks)
2 tbsp olive oil
2 tsp Smoky Cowboy seasoning
Optional: 1 tbsp cornstarch for slightly crispier texture
Directions
Preheat oven to 425°F and line a large baking sheet with parchment paper.
Peel carrots and cut into approximately 1/4 inch thick fry shaped sticks so they cook evenly.
Pat carrots dry if excess moisture is present.
Place carrots into a large mixing bowl and drizzle with olive oil.
Toss until evenly coated.
If using cornstarch for additional crispness, sprinkle over carrots and toss again.
Sprinkle Smoky Cowboy seasoning evenly over carrots and toss until seasoning is distributed throughout.
Arrange carrots in a single layer on the baking sheet with small spaces between pieces to avoid steaming.
Roast for 20 to 25 minutes, turning carrots halfway through cooking.
Cook until edges begin caramelizing and carrots are tender when pierced with a fork.
Serve immediately while warm.
