Ingredients
Smoky Buffalo Sauce
- 2 tablespoons brown sugar
- ⅔ cup (1½ sticks) butter

⅓ – ⅔ cup Tabasco sauce (adjust to taste for mild to hot flavor)
- 4 tablespoons vinegar
- 1 teaspoon salt
- 3 tablespoons Worcestershire sauce
- 2 tablespoons Würzpott Smoky Garlic Crunch

- 4 tablespoons Würzpott Chicken Rub

Directions
Make Sauce the Buffalo
- Combine the brown sugar, butter, Tabasco sauce, vinegar, salt, Worcestershire sauce, Würzpott Smoky Garlic Crunch, Würzpott Smoky Cowboy, and black pepper in a medium saucepan.
- Heat over medium heat, whisking until smooth and well combined. Remove from heat and set aside.
Prepare and Season the Wings
- (Optional: For best results, pat wings dry with paper towels before seasoning. This helps the rub stick evenly and allows the skin to caramelize better on the grill.)
- Rub the chicken wings generously on all sides with Würzpott Chicken Rub.
Grill the Wings
Preheat your grill to 525°F.
Once it reaches temperature, turn off the middle burner(s) to create an indirect heat zone. Place the wings in the center, away from direct flame.
Grill for 2 minutes per side, then close the lid and cook indirectly at approximately 350°F for 45 minutes, turning halfway through. For grills for 4 or more burners, it will take longer since there is less residual heat. Make sure all wings are cooked to a minimum of 165°F. Most chefs prefer 175-180°F for extra tenderness.
Brush the wings thickly with Buffalo Sauce and grill for 10 minutes more. Flip and grill the other side for 5 additional minutes, until the wings are glossy and lightly caramelized.
Remove from grill, let sit for 5 minutes, and serve with celery sticks and your favorite dipping sauce, such as blue cheese or ranch.
