Ingredients
1 lb smoked sausage, sliced into 1/2 inch rounds
1 tbsp olive oil
2 bell peppers, sliced
1 medium yellow onion, sliced
2 garlic cloves, minced
2 tsp Smoky Cowboy Seasoning
Optional: 1/4 tsp crushed red pepper flakes
Optional garnish: fresh parsley
Directions
Heat a large skillet over medium high heat and add olive oil.
Once oil is hot add sausage slices in a single layer and cook approximately 3–4 minutes until lightly browned.
Add sliced bell peppers and onion.
Cook another 5–7 minutes until peppers soften and onions begin caramelizing.
Add garlic and optional red pepper flakes.
Cook another 30–60 seconds until fragrant.
Sprinkle Smoky Cowboy seasoning evenly over mixture and toss thoroughly.
Cook an additional minute and serve immediately.
