Directions
Crack eggs into a medium mixing bowl. Add milk or cream and whisk vigorously for 30–45 seconds until fully combined and slightly frothy.
Stir in 1–1½ tsp Veggie Meadow seasoning and a small pinch of salt and pepper.
Heat a nonstick skillet over medium low heat and add butter.
When butter melts and begins lightly bubbling, pour egg mixture into the skillet.
Allow eggs to sit undisturbed for 20–30 seconds, then gently pull eggs from the edges toward the center using a silicone spatula.
Continue slowly folding eggs every 15–20 seconds. Avoid constant stirring.
When eggs are approximately 80–90% set and still slightly glossy, sprinkle cheddar cheese over the eggs.
Continue gently folding until cheese melts and eggs reach an internal temperature of 160°F.
Remove from heat immediately. Eggs will continue cooking from residual heat.
Finish with chopped chives or parsley and the remaining ¼ tsp Veggie Meadow seasoning.
