Ingredients
-
4 large boneless skinless chicken breasts, about 8 oz each
-
1 tbsp olive oil
-
4 1/2 tsp Pizza! Pasta! Basta! seasoning, divided
-
1/2 tsp Pizza! Pasta! Basta! seasoning for finishing
-
4 oz cream cheese, softened
-
1 cup shredded mozzarella cheese
-
1/4 cup grated Parmesan cheese
-
1/2 cup chopped pepperoni slices, optional but highly recommended
-
2 tbsp chopped fresh parsley
-
1/4 tsp black pepper
-
1/2 cup marinara sauce, warmed, optional for serving
-
Optional: fresh basil ribbons
-
Optional: crushed red pepper flakes
Directions
Preheat oven to 375°F. Lightly grease a baking dish or line a baking sheet with parchment paper.
Pat chicken breasts dry with paper towels. Using a sharp knife, carefully cut a deep pocket into the side of each chicken breast without cutting all the way through.
In a medium bowl, combine cream cheese, mozzarella cheese, Parmesan cheese, chopped pepperoni if using, 1 tbsp parsley, black pepper, and 1½ tsp Pizza! Pasta! Basta! seasoning. Mix until evenly combined.
Divide the filling evenly among the chicken breasts, about ½ cup filling per breast. Secure with toothpicks if needed.
Rub the outside of the chicken with olive oil, then season evenly with the remaining 3 tsp Pizza! Pasta! Basta! seasoning.
Heat a large oven safe skillet over medium heat. Sear chicken for 2 to 3 minutes per side until lightly golden. If your skillet is not oven safe, transfer chicken to the prepared baking dish after searing.
Bake for 20 to 25 minutes, or until the thickest part of the chicken reaches an internal temperature of 165°F. Check the chicken meat itself, not only the filling.
Remove from the oven and rest for 5 minutes before slicing. Carefully remove toothpicks before serving.
Finish with the remaining ½ tsp Pizza! Pasta! Basta! seasoning, remaining parsley, and basil if desired.
Serve with warm marinara sauce if desired.
Suggested serving methods: with pasta, roasted vegetables, garlic bread, salad, mashed potatoes, or a side of marinara sauce.
Recipe Note
Use large chicken breasts so there is enough room for the filling without tearing the meat.
Do not overfill the chicken pockets because excess filling can leak out during baking.
Searing before baking improves color and flavor while helping the chicken stay juicy.
Use an instant read thermometer for accuracy. Chicken is safe when the thickest part reaches 165°F.
Letting the chicken rest before slicing helps the juices settle and keeps the filling creamier.
Optional additions: chopped pepperoni, fresh basil ribbons, crushed red pepper flakes, or warm marinara sauce for serving.
