Ingredients
- 12 ounces penne pasta
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 inch pieces
- 1 tablespoon Pizza! Pasta! Basta!, divided
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1/3 cup chopped sun dried tomatoes packed in oil, drained
- 1/4 teaspoon crushed red pepper flakes, or more to taste
- 1 cup low sodium chicken broth
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- 1 tablespoon unsalted butter
- 2 tablespoons chopped fresh basil, plus more for garnish
Directions
Cook the pasta. Bring a large pot of water to a boil and cook the penne until al dente according to the package directions. Reserve 1 cup of pasta water, then drain the pasta.
Season the chicken. Pat the chicken dry. Toss with 2 teaspoons Pizza! Pasta! Basta! and the black pepper until evenly coated.
Cook the chicken. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning as needed, until golden and cooked through. Transfer the chicken to a plate.
Build the flavor base. Reduce the heat to medium. Add the remaining 1 tablespoon olive oil, garlic, sun dried tomatoes, crushed red pepper flakes, and the remaining 1 teaspoon Pizza! Pasta! Basta!. Cook for about 1 minute, stirring constantly, until fragrant.
Make the sauce. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Simmer for 2 to 3 minutes. Reduce the heat to medium low and stir in the heavy cream. Bring to a gentle simmer, but do not boil.
Add the Parmesan. Gradually stir in the Parmesan until melted and the sauce is smooth. If the sauce becomes too thick, stir in a small amount of the reserved pasta water until it reaches a creamy consistency.
Finish the pasta. Add the spinach and cook just until wilted. Return the chicken to the skillet, then add the drained pasta and butter. Toss gently until the pasta and chicken are completely coated in the sauce and heated through.
Serve. Remove from the heat and stir in the fresh basil. Taste before adding any additional salt because Pizza! Pasta! Basta!, Parmesan, sun dried tomatoes, and chicken broth all contribute salt. Garnish with additional Parmesan and fresh basil if desired.
