Ingredients
- 3 cups heavy cream
- 3 sheets gelatin (.25 oz powdered)
- ½ cup granulated sugar

1 tsp Sweet Lemon Spice Blend

1 tsp lemon juice
- 1 tbsp vanilla bean paste
- 1 tbsp fresh lemon zest
- Pinch of salt
- 1 package fresh blackberries
- ⅓ cup granulated sugar
- 1 tsp fresh lemon juice
- 1 tsp powdered pectin
- 1 tbsp fresh lemon zest
- Pinch of salt
- 1 tsp mint, finely chopped
For the Panna Cotta
For the Blackberry Compote
Directions
- In a medium saucepan, combine all ingredients for the panna cotta. On medium high heat, bring to a simmer. Be careful not to boil.
- Evenly distribute between two inch-deep silicone molds. Refrigerate overnight or freeze for two hours, until completely set.
- In a small saucepan, put all the ingredients for the blackberry compote. Mash the berries and stir to combine in the pot.
- On low heat, cook the berries mostly through, but leaving a few chunks.
- Remove from heat and cool on the side.
- Once panna cotta is set, remove from mold and place on plate.
Top with blackberry compote, garnish with Sweet Lemon Spice, lemon zest, and mint.
