Ingredients

4 bell peppers, any color

1 pound ground turkey or ground beef

1 cup cooked rice or quinoa

½ cup diced onion

½ cup diced bell pepper

½ cup diced celery

3-4 cloves garlic, minced

1 teaspoon Salt

1 teaspoon black pepper

1 tablespoon Sweet Paprika

1 teaspoon Oregano

1 tablespoon Cracked Pepper

¼ - ½ cup grated cheese, optional
Directions
Preheat the oven to 375 degrees F (190 degrees C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium heat, brown the ground beef or turkey. Drain off any excess fat.
Add the cooked quinoa or rice, onion, diced bell pepper, carrots, celery, garlic, salt, black pepper, Sweet Paprika, and oregano. Stir well to combine.
If using, add the Cracked Pepper to your mixture.
Stuff the bell peppers with the beef mixture and place them in a baking dish.
Bake for 30-40 minutes, or until the bell peppers are tender and the filling is heated through.
If using, top with grated cheese and bake for an additional 5 minutes, or until the cheese is melted.
