Ingredients
1 zucchini, sliced into half moons
1 yellow squash, sliced into half moons
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 small red onion, cut into wedges
1 cup broccoli florets
1 cup cherry tomatoes
3 tbsp olive oil
1–1½ tbsp Pizza! Pasta! Basta! seasoning
2 tbsp grated Parmesan cheese
2 tbsp chopped fresh parsley
½ tsp Pizza! Pasta! Basta! seasoning for finishing
Optional: fresh basil ribbons
Optional: crushed red pepper flakes

Directions
Preheat oven to 425°F and line a large baking sheet with parchment paper.
Add zucchini, squash, peppers, onion, broccoli, and tomatoes to a large bowl.
Add olive oil and 1–1½ tbsp Pizza! Pasta! Basta! seasoning and toss until evenly coated.
Spread vegetables into a single layer on the baking sheet without overcrowding.
Roast for 15 minutes.
Stir vegetables gently.
Broil for 2–4 minutes, watching closely, until vegetables develop light caramelization and lightly charred edges.
Remove from the oven and immediately sprinkle with Parmesan cheese, parsley, and remaining ½ tsp Pizza! Pasta! Basta! seasoning.
