Ingredients
12 mini peppers, halved lengthwise and seeded
1 lb lean ground beef
8 oz chunky salsa
1 Tbsp Steak Argentino seasoning
1/2 cup shredded Monterey Jack cheese
Optional garnishes: chopped cilantro, sliced green onions, sour cream, or diced avocado
Directions
Preheat oven to 375°F.
Arrange halved mini peppers cut side up on a baking sheet. Bake for 5 minutes to slightly soften the peppers.
Meanwhile, brown ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
Stir in salsa and Steak Argentino seasoning. Simmer for 2–3 minutes until slightly thickened.
Remove skillet from heat and stir in half of the shredded cheese.
Spoon filling evenly into the peppers and top with the remaining cheese.
Bake for 12–15 minutes until peppers are tender and cheese is melted.
Ground beef should reach an internal temperature of 160°F.
Serve warm with optional garnishes if desired.
