Ingredients
1 lb pork belly, cut into 1 inch cubes
1 tbsp brown sugar
4 tsp Smoky Cowboy seasoning
Optional garnish: chopped chives
Optional garnish: chopped parsley
Directions
Preheat oven to 400°F.
Line a baking sheet with foil and place a wire rack on top if available. If a wire rack is unavailable, line with parchment paper.
Pat pork belly dry with paper towels to remove excess moisture and improve browning.
In a medium bowl combine brown sugar and Smoky Cowboy seasoning.
Add pork belly cubes and toss thoroughly until evenly coated.
Arrange pork belly pieces in a single layer with slight space between pieces.
Roast for 35–40 minutes, turning the pork belly halfway through cooking.
Cook until edges become deep golden brown and caramelized.
For best texture, pork belly should reach approximately 190–205°F internally.
Allow pork belly to rest for 3–5 minutes before serving.
Garnish with chopped chives or parsley if desired and serve warm.
