Herb Ratatouille Bruschetta with Crostinis: A Fresh Bruschetta Recipe with Mediterranean Flavor
A great appetizer creates flavor, texture, and visual appeal before the main meal even begins. This Herb Ratatouille Bruschetta with Crostinis combines all three by layering roasted vegetables over crisp toasted bread for a dish that feels fresh, colorful, and satisfying. By combining classic ratatouille inspired vegetables with Sea Salt & Herbs seasoning, this recipe transforms simple ingredients into an elevated appetizer.

The heart of this dish is the roasted vegetable mixture. Eggplant, zucchini, yellow squash, bell peppers, onions, and garlic roast together until tender and lightly caramelized. Roasting naturally develops sweetness and deeper flavor while creating a richer texture throughout the vegetables. Fresh diced tomatoes and lemon juice then bring brightness and freshness that balance the warm roasted flavors.
Sea Salt & Herbs seasoning plays an important role in bringing everything together. Rather than measuring several individual seasonings, the blend adds garlic, onion, herbs, and savory notes in one convenient step. The seasoning enhances the natural flavor of the vegetables while helping create a balanced profile that feels fresh and layered without overwhelming the ingredients.
Texture is another reason this ratatouille recipe works so well. Crisp crostinis provide contrast against the tender vegetables, creating a combination that feels substantial while remaining light enough for entertaining. Fresh basil added at the end contributes color and an aromatic finish that complements the roasted vegetables.
One of the best qualities of this easy appetizer recipe is flexibility. Serve it as a party appetizer, alongside soups and salads, or as part of a larger charcuterie spread. It also works as a light lunch or snack when you want something flavorful without feeling heavy.
Recipes that combine simple preparation with impressive presentation often become favorites. Herb Ratatouille Bruschetta with Crostinis delivers fresh ingredients, Mediterranean inspired flavor, and the convenience of Sea Salt & Herbs seasoning in one colorful dish that guests will remember.
