1 lb shrimp, peeled, deveined, and cleaned

Olive oil spray

1 tsp Peppa Lemon seasoning

3 cloves garlic, minced

¼ cup lemon juice

¼ cup reduced-sodium chicken broth

2 tbsp light butter

¼ cup fresh parsley, chopped
Directions
Pat the shrimp dry with a paper towel and toss them with lemon pepper seasoning in a bowl until evenly coated.
Heat a frying pan over medium-high heat and lightly spray it with olive oil.
Add the shrimp to the pan and sear for about 2.5 minutes on each side, until they turn pink and opaque. Remove the shrimp from the pan and set aside.
If needed, spray a little more olive oil into the pan. Add the minced garlic and cook for about 1 minute, until fragrant.
Pour in the lemon juice and chicken broth, and bring the mixture to a boil. Allow it to cook for 5 minutes to reduce slightly.
Remove the pan from the heat and stir in the light butter until melted and well combined.
Return the shrimp to the pan and toss them in the sauce. Stir in the chopped parsley and adjust the seasoning to taste.
