Ingredients
-
3 cups diced yukon gold potatoes
-
½ lb of breakfast sausage
-
1 ½ - 2 tsp King of Meat seasoning
-
½ cup onion, diced (optional)
-
1 tbsp oil or butter, if needed
-
Fried or poached eggs, for serving (optional)
Directions
Place diced potatoes in a pot and cover with cold salted water by about 1 inch. Bring to a boil and cook for 5 minutes until slightly tender but not fully cooked. Drain well and pat dry thoroughly.
Heat a large skillet over medium heat. Add sausage and cook until browned and fully cooked, breaking it into small pieces as it cooks.
Remove sausage from skillet and set aside, leaving a small amount of fat in the pan.
If needed, add oil or butter to the skillet.
Add potatoes and cook undisturbed for several minutes at a time to develop a crisp golden crust.
Stir occasionally and continue cooking for 10–15 minutes until potatoes are browned and crisp.
Add onion if using and cook for 2–3 minutes until softened.
Return sausage to the skillet and sprinkle with King of Meat seasoning.
Toss everything together until evenly coated and heated through.
Serve immediately with optional fried or poached eggs.
Recipe Note
Parboiling the potatoes helps create crisp edges and a fluffy interior.
Do not overcrowd the skillet or the potatoes may steam instead of crisp.
Cook potatoes undisturbed at times for better browning and texture.
Start with 1½ teaspoons of King of Meat for balanced flavor and add more to taste if desired.
A fried egg on top adds richness and turns the hash into a complete breakfast.
