3 3.5-ounce packages instant ramen noodles, flavor packets discarded

1-2 tablespoons olive oil

1 medium onion, sliced

1 red pepper, sliced

1 tablespoon yellow curry paste

2 Tablespoons Wurzpott Smoky Curry

4 cloves garlic, minced

1 tablespoons freshly grated ginger

1 13.5-ounce can coconut milk

4 cup Vegetable Stock

1/2 cup peanut butter
-
1/3 cup chopped peanuts

1/2 Tablespoons Wurzpott Saffron Salt

1/2 tablespoon agave nectar
-
3 tablespoons soy sauce

1 lime, juiced

1/2 cup Mushrooms, sliced

1/3 cup chopped cilantro
Directions
Discard any flavor packet that came with your Ramen Noodles! We make our own Flavors here!
In a large sauce pan, heat olive oil on medium high.
Add garlic and ginger for two minutes until translucent.
Add onion and peppers, curry paste, and Smoky Curry powder, heat for 3 minutes add mushrooms.
In a separate bowl, combine 1 cup vegetable stock, and peanut butter, blend together. Set aside.
Add one can of coconut milk to vegetables and stir.
Add vegetable stock, peanut butter mixture, then simmer on medium heat for 10-15 minutes until flavors are well blended.
Add Ramen noodles and cook per package instructions serve topping with fresh, cilantro, peanuts.
