4–6 oz mozzarella (cut into 1/2-inch cubes)

1/2 cup flour

2 eggs (beaten for coating)

1 1/2 - 2 cups breadcrumbs (panko preferred)

1–2 tsp Mamma Limone (for breadcrumbs)

2–3 cups neutral oil (for frying)
Directions
Prepare rice: ensure it is sticky and slightly cooled, not dry or fluffy.
Mix rice with Parmesan, egg, butter, and Mamma Limone until tacky.
Cut mozzarella into small cubes (12–14 pieces).
Scoop 2–3 tbsp rice, flatten, add cheese, and form tight balls with no cracks.
Set up breading station: flour, egg wash, breadcrumbs mixed with Mamma Limone.
Coat each ball: flour → egg → breadcrumbs.
Heat oil to 350°F (use thermometer or breadcrumb test).
Fry 3–4 at a time for 3–4 minutes, turning for even browning.
