1 cup heavy cream

½ cup grated Parmesan cheese

½ cup reserved pasta water

2 tbsp chopped fresh parsley

¼ tsp black pepper

Directions
Bring a large pot of salted water to a boil. Cook penne according to package directions until al dente. Reserve ½ cup pasta water before draining.
Meanwhile heat olive oil and butter in a large skillet over medium heat.
Add bell pepper, zucchini, yellow squash, and broccoli. Cook 5–6 minutes, stirring occasionally, until slightly tender but still colorful.
Add garlic and cook 30 seconds while stirring continuously.
Add cherry tomatoes and cook another 1–2 minutes until slightly softened.
Reduce heat to medium low and stir in heavy cream, Parmesan cheese, black pepper, and 1–1½ tbsp Veggie Meadow seasoning.
Slowly stir in reserved pasta water until sauce becomes smooth and lightly coats the back of a spoon.
Add cooked pasta and toss until evenly coated.
Cook an additional 1–2 minutes until the dish reaches approximately 165°F.
Remove from heat and finish with parsley and remaining 1 tsp Veggie Meadow seasoning.
