12 oz pasta

1 can chickpeas (15 oz), drained

2 tbsp olive oil

2 to 3 tsp Mamma Limone seasoning

3 cloves garlic, minced

1 cup heavy cream or half and half

2 cups fresh spinach

1 to 2 tbsp lemon juice

1/2 cup grated Parmesan (optional)
Directions
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
Heat 1 tbsp olive oil in a large pan over medium heat.
Add chickpeas and 1 tsp Mamma Limone. Cook for 5 to 7 minutes until lightly golden and slightly crisp.
Add remaining 1 tbsp olive oil and minced garlic. Cook for 30 to 45 seconds until fragrant.
Pour in heavy cream and add remaining 2 tsp Mamma Limone. Simmer for 3 to 4 minutes.
Add spinach and cook until wilted.
Add cooked pasta and a splash of reserved pasta water. Stir until sauce becomes smooth and coats the pasta.
Remove from heat and add lemon juice.
Stir in grated Parmesan until fully incorporated.
