Chef Brian Duffy’s Crispy Chicken Parmesan with Homemade Tomato Gravy
A Classic Worth Making from Scratch
Few dinners are as satisfying as crispy chicken Parmesan served alongside spaghetti with rich tomato sauce and bubbling cheese. Chef Brian Duffy builds this Italian American favorite with thin chicken cutlets, a savory Pecorino breadcrumb coating, and Würzpott Pizza! Pasta! Basta! for flavor in every bite.
The Secret to Crispy Chicken Parmesan
For a standout homemade chicken Parmesan, Brian starts by pounding chicken breasts into even, ¼ inch cutlets. Each piece gets a cornstarch, egg wash, and gluten free breadcrumb coating, with grated Pecorino Romano and the seasoning mixed directly into the crumbs. A brief rest helps the coating adhere before the cutlets are fried until golden. That careful preparation makes a difference: the breading forms a crisp exterior while the chicken stays tender, giving each forkful the contrast that makes this dish so satisfying.
A Quick Tomato Gravy with Big Flavor
The sauce is simple but full of character. Thinly sliced garlic turns pale gold in olive oil before crushed San Marzano style tomatoes and Würzpott Pizza! Pasta! Basta! go into the pan. After a short simmer, fresh basil finishes the gravy. It is an approachable sauce that tastes right at home beside crisp chicken and tender spaghetti. Because the sauce comes together while the rest of the meal is prepared, there is no need to spend hours at the stove.
Three Cheeses, One Delicious Finish
Fresh mozzarella, fontina, and Parmigiano create a rich, beautifully melted topping. Brian adds a spoonful of gravy over each fried cutlet before layering on the cheeses and finishing everything in a hot oven. His key tip: keep the gravy on top, not underneath, so the bottom of the breading stays crisp.
Bring Chef Brian’s Recipe to Your Table
Serve the finished cutlets alongside spaghetti tossed with the remaining gravy for a complete, comforting meal. Whether you are planning a family Sunday dinner or looking for a crowd pleasing chicken Parmesan recipe, this dish delivers familiar flavors with a chef’s attention to technique. With Würzpott Pizza! Pasta! Basta! in both the sauce and the coating, every serving brings together crispy texture, savory depth, and the kind of cheesy finish everyone looks forward to.

¼ cup olive oil
8 garlic cloves, thinly sliced
1 can (28 oz) San Marzano style crushed tomatoes
1 Tbsp Würzpott Pizza! Pasta! Basta!
Torn basil, to taste
Kosher salt, to taste
- Chicken Cutlets
3 large boneless, skinless chicken breasts, halved horizontally
1 cup cornstarch
3 large eggs plus 2 Tbsp milk
2 cups gluten free panko or breadcrumbs
½ cup grated Pecorino Romano
1 Tbsp Würzpott Pizza! Pasta! Basta!
Würzpott Sea Salt & Herbs, to taste
Neutral frying oil, enough for ½ inch depth
- To Finish
1 lb fresh mozzarella, sliced, (or 12 oz low moisture mozzarella, shredded)
¼ lb fontina, shredded
½ cup grated Parmigiano
1 lb spaghetti
Directions
-
Make the gravy. Heat olive oil over medium heat. Cook sliced garlic until pale gold, about 1–2 minutes. Add crushed tomatoes and Pizza! Pasta! Basta! Simmer 20 minutes, stirring occasionally. Finish with basil and salt to taste.
-
Prepare the chicken. Slice breasts horizontally into six cutlets. Pound evenly to ¼ inch thickness and season lightly with Sea Salt & Herbs.
-
Bread the cutlets. Set out three shallow bowls: cornstarch; eggs whisked with milk; and gluten free panko or breadcrumbs mixed with Pecorino and Pizza! Pasta! Basta! Coat chicken in cornstarch, dip in egg wash, then press into crumbs. Rest 10 minutes.
-
Fry the chicken. Heat ½ inch of neutral oil to 350°F. Fry in batches for about 3 minutes per side until golden and crisp. Transfer to a wire rack.
-
Add sauce and cheese. Preheat oven to 425°F. Place cutlets on a baking sheet. Spoon a little gravy over each, then top with mozzarella, fontina, and Parmigiano.
-
Bake and cook pasta. Bake 8–10 minutes until cheese melts and chicken reaches 165°F internally. Meanwhile, cook spaghetti in salted boiling water until al dente. Drain.
-
Serve. Plate chicken cutlets with spaghetti and the remaining warm gravy alongside. Serve immediately.
Notes
Chef Brian Duffy’s note: Spoon gravy on top of the cutlets, never underneath, to help keep the bottom crisp.
Check that the chicken reaches an internal temperature of 165°F; cooking times vary with cutlet thickness.
Frying oil absorption varies depending on the pan and breading.
