Ingredients
- 1 cup collard greens, bite size pieces
- 1 cup kale, bite sized pieces
- 1 cup couscous, cooked and cooled
- ½ cup roma tomatoes, small diced
- ½ cup cucumbers, small diced
- 1 tbsp walnuts, roughly chopped
- 9 ct shrimp, peeled and deveined
- 1 tsp blended oil

- Salt and pepper to taste
- ½ cup olive oil
- ½ cup blended oil
- 3 tbsp white wine vinegar
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dijon mustard
- 1 tsp dried oregano
- Salt and pepper to taste
For the Vinaigrette
Directions
- In a medium saucepot, bring salted water to a boil. Add the couscous and cook until tender, about 10-12 minutes.
- Drain the couscous and set aside to cool.
- To prepare the salad, cut the kale and collard greens into bite sized pieces and set aside. Continue with the tomatoes and cucumbers by cutting them into small diced pieces.
- Roughly chop the walnuts and set aside with the other ingredients.
- Combine kale, collard greens, couscous, cucumbers, tomatoes, walnuts, salt, and pepper in a medium bowl.
- For the vinaigrette, combine all ingredients into a mason jar, and shake with lid on for one minute. Set aside.
In a small saucepan, heat oil on medium heat. Season the shrimp generously with salt, pepper, and Shellfish Sensation Spice.
- Sear each side of the shrimp until slightly charred, about two-three minutes. Remove from heat and cool.
- Lightly dress the combined salad from Step 5 with the vinaigrette from Step 6. Toss salad until everything is coated.
- Portion the salad onto small plates and top with charred shrimp. Garnish with more walnuts, if desired.
