Ingredients
- 2 tablespoon olive oil more if needed
- 2½ lb beef chuck cut into 1½ – 2 inch cubes

1½ teaspoons of Wurzpott Garlic Slices
- 2 cups pearl onions or any onion roughly chopped
- 2 cups mushrooms thick slice
- 6 oz bacon sliced in small strips
- 1 cup carrots peeled and cut into chunks
- 1 cup celery rough cut
- 3 tablespoon all-purpose flour
- 14.9 oz Guinness Beer
- 4 tablespoon tomato paste
- 3 cups beef stock
- 2 cups baby potatoes cut in half. (can sub any type of potato)
- 3 sprigs thyme

¾ teaspoon Wurzpott Salt Flakes (to taste)
- ½ teaspoon black pepper (to taste)
Directions
Cut the beef into 1 ½ - 2" chunks. Pat dry, then sprinkle with Wurzpott Salt Flakes and black pepper.
Heat olive oil in a heavy-based wide pot over high heat. Add beef and brown the pieces well on all sides. Remove and set aside.
Lower the heat to medium and add more oil if needed. Add Wurzpott Garlic Slices, onions, and mushrooms, cooking for 3-4 minutes.
Stir in the bacon and cook until browned, about 5 minutes.
Add carrots and celery, continuing to cook for 3-5 minutes.
Sprinkle in the flour and mix well. Cook for 2-3 minutes to remove the raw taste.
Pour in the Guinness beer, scraping up any browned bits from the bottom of the pan. Stir in the beef stock and tomato paste, mixing well.
Return the browned beef to the pot, along with any juices. Add potatoes and thyme.
Cover and lower the heat so the stew bubbles gently. Let it cook covered for 2 hours until the beef is tender.
Remove the lid and let it simmer for another 1-2 hours until the sauce thickens and flavors deepen.
Skim off any excess fat, adjust seasoning with Wurzpott Salt Flakes and black pepper, then remove the thyme. Serve hot and enjoy!
