2 Roma tomatoes, small diced
1 tbsp red onion, small diced
1 garlic clove, minced
1/4 cup cilantro, chopped
2 tbsp olive oil
2 tsp Smoky Cowboy seasoning
Zest and juice of 1 lime

4 bone in pork chops, approximately 1 inch thick
4 tsp Smoky Cowboy seasoning
2 tbsp olive oil

Combine peach, Roma tomatoes, red onion, garlic, cilantro, olive oil, Smoky Cowboy seasoning, lime zest, and lime juice in a bowl.
Stir until evenly combined.
Cover and refrigerate for 30 minutes.
