Ingredients
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
2 ears corn
1/2 red onion
1 red pepper
3 Roma tomatoes, small diced
2-3 garlic cloves, minced
2 jalapeños, minced (remove seeds for less heat)
1/2 cup cilantro, chopped
4 tsp Smoky Cowboy seasoning total
2 tbsp butter, melted
Zest and juice of 1 lime
Zest and juice of 1 lemon
2 avocados, small diced

Preheat grill to medium high heat.
Combine melted butter with 1 teaspoon Smoky Cowboy seasoning.
Brush corn, onion, and red pepper evenly with mixture.
Grill corn 8–10 minutes rotating occasionally until lightly charred.
Grill onion and pepper 5–8 minutes until softened with grill marks.
Cool vegetables completely.
Remove corn kernels and dice onion and pepper.

Combine kidney beans, black beans, grilled vegetables, tomatoes, garlic, jalapeños, and cilantro in a large bowl.
Add lemon zest, lemon juice, lime zest, lime juice, and remaining 3 teaspoons Smoky Cowboy seasoning.
Stir gently until evenly combined.
Cover and refrigerate 30 minutes.
Immediately before serving gently fold in diced avocado.
Serve chilled or at room temperature.
