Ingredients
-
28 oz canned whole San Marzano tomatoes (drained)
-
2 scallions
-
½ red onion, diced
-
2 large cloves of garlic, grated
-
1 jalapeño pepper, sliced (adjust to taste)
-
⅓ cup fresh cilantro leaves
-
¾ tsp ground cumin (or adjust to taste)
-
1 tsp sweet Paprika (or more to taste)
-
OR tsp Smoky Paprika (or more to taste)
-
Juice of 1 large lime
-
Pinch of sea salt (plus more to taste)
Directions
- In a food processor, add the diced red onion, scallions, garlic, and sliced jalapeño. Pulse briefly until chopped.
Add the drained tomatoes, cumin, paprika, cilantro, and lime juice to the processor. Season with a pinch of sea salt.
Gently pulse the mixture a few times, ensuring you don’t over-process the salsa. You want to keep it slightly chunky. (For a chunkier texture, you can chop everything by hand.)
Transfer the salsa to a bowl and taste for seasoning. Add more lime juice, sea salt, or paprika as needed. If you prefer a thinner salsa, mix in some of the reserved tomato juice.
Recipe Note
Tomatoes: While sweet San Marzano tomatoes are recommended for the best flavor, you can use fire-roasted or other canned tomatoes. Just note that the taste might vary.
Paprika:
Start with 1 tsp and adjust to taste. If you love paprika, feel free to
add up to 1 Tbsp.
Spice Level: If you prefer a milder salsa, omit the jalapeño pepper.
